As I was watching a crazy Spring snowstorm hit us, I started daydreaming of the beach and warmer weather. Nothing says summer like a frozen pina colada at the beach.
A couple of weeks ago, I found these neat little packets of fresh coconut in the frozen department of the grocery store. As soon as I laid eyes on them, I was immediately thinking SMOOTHIE!
I added four other simple ingredients and voila, a delicious and healthy pineapple coconut smoothie. The above image has my favorite brands, but any will work just fine.
5 Ingredient Pineapple Coconut Smoothie
- 1/2 cup frozen pineapple chunks
- 1 packet frozen pureed coconut (individually packaged)
- 1 5 ounce container vanilla yogurt
- 3/4 cup almond milk
- 1/4 cup coconut water
- Add all ingredients into blender and mix on medium speed until well combined. This is the most simple smoothie recipe I have ever had.
