Great Grandma's Apple Bread
Homemade simple recipe that has been in our family for generations. Apples, cinnamon, brown sugar and almond extract are the core ingredients. Great for breakfast or an afternoon snack!

Servings: 8 mini-loaves
- 1/2 cup light brown sugar
- 1/2 cup granulated sugar
- 1/2 teaspoon cinnamon
- 1/2 cup unsalted butter
- 2 eggs
- 1 teaspoon almond extract
- 1 1/2 cups all purpose flour
- 1 1/2 teaspoons baking powder
- 1 tablespoon lemon juice
- 1/3 cup whole milk
- 1 1/2 large apples
Preheat oven to 350 degrees. Grease and flour baking pans. I used 8 mini-loaf pans for this but you can also use one regular sized loaf pan.
Cut apples into small pieces. in a small bowl, add 1/4 cup brown sugar and lemon juice to fruit. Set aside.
In an electric mixer, beat softened butter and remaining sugars until creamy. Add eggs one at a time and extract. Mix until well blended.
Add flour, baking powder, and milk to butter mixture. Mix until just combined and smooth. Do not over mix.
If using mini-loaf pans, place 2 tablespoons of bread mixture into pans. Add 1-2 tablespoons of cut apple mixture, and top with another 2 tablespoons of the bread mixture.
If using one loaf pan, take half of bread mixture and add to pan. Add all of apple mixture in the middle and top with the rest of the bread mixture. Either way, you will have the gooey apple goodness in the middle of them.
Gently swirl combined mixtures with butter knife slightly. Do not press them to far into the batter or they will sink to the bottom and stick to the pan.
Optional: Top bread batter with another tablespoon of brown sugar and granulated sugar before baking to create a crystallized top.
Bake for 15 minutes in the mini-loaf pans or 30 minutes in the single loaf pan. Bread is done when toothpick comes out clean. Enjoy!
